New year, new you = better food choices, right?
Right. I generally like to start my better choices even before the year ends – at our annual New Year’s Eve party. For the last several years, we have had a family of four close friends stay with us for three or four nights during the end of December into January. It’s fantastic to get so enmeshed with another family – all of us becoming one large family. On New Year’s Eve itself, we often have a few more families come join us for the night too. We look forward to it all year. I can’t believe it’s 2017!
It’s a feast and a fest. My husband puts on the live webcast of the Madison Square Garden Phish show and my oldest actually makes it until midnight every year. We look forward to kicking out the previous year, and welcoming a new one into the house. Many of us are foodies, so the food is something to plan and dream about ahead of time.
Healthier Avocado Pomegranate Brownies Recipe
Tia, our now 16-year-old houseguest, has been learning to cook for most of her life. Three years ago, when she was only 13, we thought it would be fun to make Superfoods Bark. It would have a dark chocolate base and have pistachios and pomegranate seeds. We didn’t have the right salt, and accidentally dumped way too much kosher salt onto the bark – and ruined the dessert! Since then, we have scrambled to never let that happen again. I was inspired by the idea of a healthier dessert, though. That’s how I came up with these (healthy) Avocado Pomegranate Brownies.
You can make them extra fudgy with the ingredients of avocado, applesauce or banana, and syrup. You also have the choice to make them more cake-like, depending on your preferences. It’s all in the baking!
- 1 large avocado
- 1/2 cup mashed banana or unsweetened applesauce
- 1/2 cup maple syrup
- 1 tsp vanilla extract
- 3 eggs - I used large
- 1/2 cup flour (coconut flour is a good choice)
- 1/2 cup unsweetened (dutch-processed) cocoa powder
- 1/4 tsp salt
- 1 tsp baking soda
- 1/2 cup pomegranate seeds
- 1/2 cup dark chocolate chunks or chips
- Preheat oven to 350ºF.
- Lightly grease an 8x8 baking dish.
- In a food processor or blender, mix avocado, banana (or applesauce), maple syrup, and vanilla - you can also mash by hand, but get clumps out.
- Put ingredients in a large mixing bowl and add eggs, flour, cocoa powder, pomegranate seeds, chocolate chunks, salt, and baking soda.
- Combine ingredients well and then pour into baking dish.
- Sprinkle with remaining chocolate chunks and pomegranate seeds.
- Bake for 25 minutes for fudgy brownies and bake a little longer for cake-like brownies.
Home Chef Tips: Use dutch-processed cocoa for your unsweetened cocoa to avoid bitter-tasting brownies. Also, sprinkle your remaining chocolate chunks and pomegranate seeds on top of the brownie batter for a wonderful finish.
They look delicious, right?
I’m always a sucker for a good brownie recipe, but there’s something about making them with better choice ingredients. I first discovered a love for avocados when I lived in California, and they were made in everything. Back in New Jersey, I had never discovered the beauty and power of using them in both savory and sweet dishes. Now I can’t imagine baking without this wonderful fat.
It’s only February, so what are you waiting for? The new year is a wonderful time to think about ingredients and recipes in a new way.
