Breakfast can be stressful. You’re getting ready for work, probably running late, didn’t pack your lunch the night before, and now you’re stressing about the most important meal of the day. Please tell me this scenario doesn’t just apply to me. It can’t possibly…right?
If we’re on the same page, let’s continue. You could grab a granola bar, but you’ll be hungry in no time. You could down a yogurt, but that’s so unsatisfying and if you’re going to get through those work meetings before lunchtime, you’ll want something fast and substantial.
That’s where Avocado Toast comes in! Avocado toast doesn’t take a long time to make, you can take it to go if you don’t mind a little crumbs, you’re consuming a healthy and balanced meal, and the best part is you have so many options; the three here being just three of many.
You’ve probably seen tons of avocado toast recipes out there, but you can’t possibly have enough. It’s like creative guacamole on toast! It’s a dream is basically what I’m saying. Ya dig? To me, the key to a great avocado toast is simplicity. Because avocado can stand on its own and you definitely don’t want to overshadow the star of the show.
So, without further ado, here are three healthy avocado toast recipes you should’ve been making, like, yesterday:
One thing I love for breakfast is a hard-boiled egg. And with avocado toast being so awesome, stick an egg on it, is what I say! Sprinkle with some salt and red pepper flakes and you’ve got yourself a meal.
Keeping with my healthier eating promise to myself, I either eat turkey bacon (pictured here) or nitrate-free bacon. One of my favorite sandwiches is a BLT so just call this avocado toast a BLA, which kind of trumps the original, if I’m being honest. Yes, it’s true!
This avocado toast variety was inspired by leftovers we had after taco night. Radicchio is slightly bitter, corn is sweet, and avocado is what it is, which is to say it’s amazing. I thought with these ingredients, the addition of hummus would be a good one. And I’m happy to say I was right.
So go on now. Grab those avocados, create your toasts, and cheers to a healthy breakfast!
- 3 slices of your favorite bread
- 2 Hass avocados
- Juice from 1 lemon
- 1 tablespoon extra-virgin olive oil
- Salt and pepper, to taste
- 1 hardboiled egg, sliced
- Pinch red pepper flakes
- Tomato slices
- 1 slice turkey bacon, cooked
- 2 tablespoons hummus
- 1 radicchio leaf
- Pinch of cooked corn kernels
- Toast your bread slices. Set aside.
- In a small bowl, mash avocado and add lemon juice, olive oil, and salt and pepper to taste.
- To assemble: Spread mixed avocado evenly over the three toast slices. Top one with hardboiled egg slices, salt, and red pepper flakes. Top a second avocado toast with tomato slices, pepper, and bacon. Top your third avocado toast with a smear of hummus, radicchio, and corn.
