It’s back to school time around here. My brain is slowly transitioning from lazy summer days to make-ahead breakfasts and lunchbox ideas. This year our youngest starts preschool, which means a couple mornings each week both of my kids will be at school. I can’t believe how fast time flies! New school year and we’re ready!
I love mornings when breakfast is already made and ready for us. The morning goes smoother, my kids eat better, and my stress level is lower when I’m not frantically whipping up something before heading out the door. These Blueberry Banana Oatmeal Cups are the perfect make-ahead breakfast. I bake them in the evening, then simply reheat them in the morning right before we’re ready for breakfast.
Blueberry Banana Oatmeal Cups: A Make-Ahead Breakfast
These oatmeal cups are hearty and comforting – filled with oats, maple syrup, almond butter, mashed banana, and healthy blueberries. I like to serve these warm with a smear of butter and a drizzle of honey or syrup. My kids devour them, which makes me feel good about sending them on their way with full bellies. Bonus: If you’re running late, just heat them quickly and take them with you as you head out the door. These oatmeal cups are portable enough to enjoy while commuting to work or school.
I like to think of these as a mix between a muffin and oatmeal. They look like a muffin, but they taste like oatmeal. They do not contain any flour, and if you use gluten-free oats, they are gluten free too. Feel free to swap around some of the ingredients – peanut butter can be used in place of almond butter, honey can be used in place of maple syrup, and you can swap the blueberries for any other berry of your choice (diced strawberries would be great!).

Ingredients
- 2 medium-sized bananas, mashed
- ⅓ cup almond butter
- ¼ cup pure maple syrup
- 1 large egg
- 2 tbsp milk
- 1 tsp vanilla
- 2 cups old fashioned rolled oats
- 1 tsp baking powder
- ¾ cup fresh blueberries
Instructions
- Preheat oven to 350°F. Grease a 12-count muffin tin and set aside.
- In a large bowl, combine banana, almond butter, syrup, egg, milk, and vanilla. Add oats and baking powder and stir to combine. Gently stir in blueberries.
- Transfer batter to prepared muffin cups (this should fill between 10 and 12 muffin cups). Bake for 13-15 minutes, until cooked through and set.
- Serve warm with butter or a drizzle honey or syrup.
