This delicious Chocolate Quinoa Breakfast Bowl can be made overnight and prepared in mason jars for a great breakfast to go! Just add milk, some bananas, your favorite nuts, and breakfast is ready when you wake up in the morning.
While I was growing up, breakfast was one of my favorite foods. I always enjoyed a big bowl of cereal. My favorite being the ones with chocolate on them. Of course, there is nothing better than the flavorful milk at the end. But now I am a “grown up” and cannot find an excuse to eat those delicious cereals every morning.
With this in mind, I wanted to find a breakfast recipe that would be as exciting as those childhood mornings, but more appropriate for my lifestyle and age. Another important thing to consider was time. I do not have extra time in the morning to start making an elaborate dish. So this breakfast had to be easy to make.
Chocolate Quinoa Breakfast Bowl Recipe
After trying a few different grains, I realized that quinoa was my all time favorite one. It’s a very healthy seed to add to my breakfast! I started this recipe by rinsing the quinoa and cooking it with water. Once the quinoa was ready, I turned the temperature to low and added the coconut milk, sugar, vanilla extract, and the cocoa powder to the pot. It is important to stir thoroughly until the quinoa absorbs all the ingredients.
One of my favorite things about this recipe is that it lasts for a few days without affecting its flavor. Because of this, I prefer making it the day before and preparing it in different jars/portions for the rest of the week. So, once the quinoa mix has reached room temperature, I store it in mason jars.
This recipe can last refrigerated for up to three days. So, the next morning you can put your chocolate quinoa in a bowl and add some milk, bananas, and nuts. Or you can add some milk to the mason jar and take it with you!
Oh, and I still did not tell you the very best part…the milk will get a chocolate flavor, just like the one from your favorite childhood cereals! But with a bowl full of iron, magnesium, vitamins B, and many other proteins, you won’t feel all of the guilt.
Ingredients
- 1 cup quinoa
- 2 cups coconut milk
- 1/3 cup cocoa powder
- 1tsp vanilla extract
- 1/4 cup sugar
- 1 banana
- Chocolate covered raisins
- Nuts
- Milk
Instructions
- Rinse and cook the quinoa as instructed on the package.
- Once the quinoa is ready, add the coconut milk, cocoa powder, sugar, and vanilla extract.
- Stir until the quinoa has absorbed all the milk and there are no cocoa powder clumps.
- Serve with milk and some bananas, your favorite nuts, and even some chocolate covered raisins!
Notes
For an on-the-go breakfast: Let it rest at room temperature and store in portion sized containers to keep it fresh and yummier!
Home Chef Tip: To make this breakfast bowl more fun and kid-friendly, you can replace the nuts with some chocolate chips (and sprinkles!). Or for a healthier version you can use Stevia instead of sugar and use half the amount of cocoa powder.
