The combination of chocolate and coconut is one that is simply unbeatable! Ever tried a coconut-chocolate chip cookie? It is divine. Count me in for anything that involves that duo.
Coconut is amazing whether it is in savory or sweet dishes. Chocolate, just by itself, is pure joy. With a combination of the two in this batter, you just can’t go wrong!
Gluten-Free Coconut Brownies Recipe
The best part is this is so easy to put together. You only need six ingredients, one bowl, and the will to make some brownies.
I used coconut flour which you can find in the baking aisle of your local grocery store. With no regular flour added, these brownies are completely grain-free. The other ingredients include cocoa powder, coconut oil, eggs, and honey (substitute with maple syrup if you prefer). You also need just a pinch of salt. Don’t skip the salt. I always say a little salt goes a long way to make sweet treats taste better.
All you need to do is dump all your brownie ingredients into a bowl and mix (of course you should crack the eggs before dumping). Then put the batter into a greased, square baking pan, and spread so it is even.
Then simply bake them into brownie goodness!
Let it cool completely, then cut into squares.
Enjoy to your heart’s content! How about enjoying brownies without worrying about calories, your waistline, and the scale? You’re going to love these healthier classics just as much as traditional brownies!

Notes
Home Chef Tip 1: To ensure honey comes out easily from your measuring cup, oil the cup with a teaspoon of oil before putting in the honey.
Home Chef Tip 2: Add a teaspoon of vanilla extract into your brownie batter for flavor if you desire. Alternately, if you really like an intense coconut taste, add a teaspoon of coconut extract instead.
