This simple to follow recipe delivers a delicious dessert that definitely fits the occasion and makes your holiday table a lot more fun. Moist yellow cupcakes topped with decadent chocolate frosting decorated with your favorite candies to make them look like turkeys. These turkey cupcakes will be gobbled up after dinner with delight!
- For the Cupcakes:
- 2 sticks unsalted butter
- 1½ cups sugar
- 1 tbsp baking powder
- 4 large eggs
- 1 cup milk
- 2 tsp vanilla extract
- 2¾ cups all-purpose flour
- For the Frosting:
- ¼ cup unsalted butter
- 3 tbsp cocoa powder
- ¼ cup whole milk
- 2 cups powdered sugar
- 1 tsp vanilla extract
- For the Decorating:
- Mike and Ike Candies
- Mini chocolate peanut butter cups
- White candy beads
- For the Cupcakes:
- Heat oven to 350°F.
- Place 12 regular-sized cupcake liners in the cups of your muffin tin. Set aside.
- Beat butter, sugar, and baking powder in a large bowl with mixer on high speed 1 minute or until well blended.
- Add eggs, beat 2 minutes until fluffy.
- Reduce mixer speed to low and beat in milk and vanilla, then flour just until blended.
- Spoon batter into lined muffin cups, filling each 2⁄3 full.
- Bake 20 to 25 minutes until a wooden pick inserted in centers of cupcakes comes out clean.
- Cool on wire rack before decorating.
- For the Frosting:
- Melt the butter in the microwave, then whisk in the cocoa powder.
- Add the milk and vanilla, whisk until frothy.
- In a stand mixer with a beater attachment, work the powdered sugar into the liquids a little at a time until fully blended.
- The frosting should be thick but spreadable. If too runny, add more powdered sugar. If too stiff, add in a teaspoon of milk.
- To Decorate:
- Spread the frosting on all 12 cupcakes.
- Place the mini chocolate peanut butter cups near the front end of the cupcake, tilted forward just a bit to make the face.
- Put a little bit of icing as glue on the candy beads and place as eyes on the peanut butter cup.
- Put a little icing on one Mike and Ike and stick it on the peanut butter cup as the beak.
- Use Mike and Ike Candies to make your wings and tail.
