If you’re looking for a simple and delicious meal to serve during the 8-day Hanukkah celebration this year, you’ll really want to include this recipe for Fried Salmon Patties to make your holiday celebration complete!
The holidays are my favorite time of year! I love this mini marathon between Thanksgiving and New Years, even though every year I end up exhausted. It is a good kind of tired though, that making memories kind of tired. Our family celebrates quite a few holidays with one of the main ones being Hanukkah which may be one of the most indulgent- yes, even more so than Thanksgiving! See, the story of Hanukkah is based around the miracle of oil that was only expected to last one day but instead lasted eight, and for this reason, we have decided this holiday must consist of predominately fried food. Not too shabby, am I right? Here is one of our favorite Hanukkah recipes…Salmon Patties.
Now this is a super easy recipe, there are only four ingredients:
- 2-14.5oz cans of pink salmon (save yourself some grief and try to find it skinless and boned, it is worth the money)
- 1 small onion or 1/2 a large onion
- 3 eggs
- 1 cup matzo meal
- Oil and a cast iron skillet for frying
First, flake your salmon in the bowl and you would also want to take the skin and bones off at this point as well if it was not done already for you.
Then add the eggs. I started with two and then added one because it looked dry, but I would start with two just to be safe.
Next, you are going to want to grate your onion over the bowl so all the juice goes in as well and then add your cup of matzo meal.
Once it is all combined (using your hands is just easier because it is pretty much the consistency of meat loaf), you want to make patties that are right between a normal hamburger and a slider size. They are about 2.5 inches in diameter and about a half inch thick.
Then bring your oil (about 1/2 inch) to temperature in your cast iron skillet, I do this by sticking a wooden spoon in and if bubbles come up around the edges I know it is ready.
Then add your patties and fry until you see them start to turn golden brown around the edges, usually after a few minutes.
Then flip them for another 3-4 minutes and pull them out onto paper towels. That’s it!
I am glad that these are so easy because on Hanukkah, part of the fun is everyone coming together to make approximately 2,342 latkes and about half as many salmon patties so they need to be quick so we can get to the eating! We also love these all throughout the year with fries on a Friday movie night or even over a salad mid-week!
