These S’mores Cereal Bars are the perfect summer treat. A unique twist on a traditional summertime favorite, these crispy treats come together in minutes with the help of your oven.
With the school year over, my family and I are preparing by purchasing new swimming suits, outdoor toys, and stocking up on s’mores supplies. Because really, is it even actually summer without s’mores? I’d argue, no. And I’d also argue that the best way to enjoy a s’more is with a charred marshmallow, but that’s a debate in my family that’s caused serious marshmallow trauma, so I’ll save you for now.

Growing up, I’d spend my summers with family in Northern Michigan and up there where the summer days are sticky and warm and the evenings cool enough for a bonfire, you could count on everyone having three things in their car: a chair for bonfire sittin’, a can of bug spray for the pesky mosquitoes, and s’mores fixin’s. Back then, it was an easy task to convince the adults to give me more than one of the toasted treats, but as an adult, I have a much harder time convincing my waistline. Nonetheless, I still enjoy finding creative ways to recreate my beloved treat, which is how I came up with this perfect S’mores Cereal Bars recipe that I’m sharing with you today.
It all starts with a classic cereal bars recipe by melting some butter and marshmallows over low heat.
Next, add in a dash of vanilla.
And loads of crispy rice cereal.
Transfer the mixture to a baking dish well greased with butter.
Flatten out the cereal mixture until it fills the dish and then add a layer of marshmallows.
Pop it into the oven on the broil setting for just a couple of minutes. This part is tricky and you will need to babysit the marshmallows to ensure they don’t burn. Unless you’re like me and believe the best kind of s’more begins with a burnt marshmallow.
Once the marshmallows have slightly browned, remove them from the oven and top them with chocolate chips and crushed graham crackers.
Allow them to cool before cutting them into bars and serving, that is if you can resist the temptation to dive right in!
These S’mores Cereal Bars travel well which makes them great for summer picnics or potlucks. But I love to bring them to bonfires in place of s’mores fixin’s and pass around the pan for everyone to enjoy!
- ¼ cup butter
- 5 cups crispy rice cereal
- 4 cups mini marshmallows + 1 cup for topping
- 1 dash vanilla extract
- 1-2 cups chocolate chips
- 1 cup crumbled graham crackers
- Melt butter and 4 cups marshmallows over low heat.
- Add vanilla extract and stir.
- Add cereal to melted marshmallow and stir to combine.
- Transfer into a well greased 9”x9” baking pan.
- Flatten out the cereal mixture, then cover with a layer of marshmallows.
- Place the pan in the oven on broil for just a couple of minutes, just until the top layer of marshmallows is browned to your liking.
- Remove from oven and top with chocolate chips and graham cracker crumbs.
- Allow to cool before cutting into bars.
