No Churn, Two Ingredient Strawberry Ice Cream!
School is almost out for summer and that means it’s time to celebrate with this two ingredient strawberry ice cream! This ice cream will have you jumping for joy, it’s so easy to make and secretly healthy as well. It’s a great way to get your picky eaters to get more real fruit into their day. This recipe only calls for two ingredients, frozen organic strawberries and frozen coconut whipped cream. The only kitchen appliance you will need is a food processor. No fancy ice cream maker required!
The perfect summer celebration food, in my eyes, is always ice cream. The texture of this two ingredient strawberry ice cream is closer to frozen yogurt; creamy and smooth. And let’s be honest, your kids will flip out when they find out that they can make ice cream! This recipe would be so fun to experiment with flavors with the kids as well. You could use frozen blueberries, cherries, mangos, or even a mixture of frozen berries. Wouldn’t it be nice to know they were begging for a healthy treat instead of the sugary stuff from the ice cream man?
To make this two ingredient strawberry ice cream, you will need to let your frozen organic strawberries sit out on the counter for about 5 minutes so they don’t destroy your food processor. Then just blend until smooth, add the frozen coconut whipped cream, and blend until well combined. Either serve immediately or place in a glass container in the freezer, stirring every 30 minutes or so to ensure it doesn’t get rock hard. Don’t leave this in the freezer for more than an hour or two, as this will get rock hard and no longer fun to eat.
- 1 bag frozen organic strawberries, defrosted 5 minutes
- 1 container frozen coconut whipped cream (or frozen whipped cream of choice)
- After allowing the strawberries to defrost about 5 minutes, add them to the food processor and process on high for 30 seconds.
- Scrape down the sides, and add the frozen coconut whipped cream. Process until smooth. You may need to scrape down the sides again.
- Serve immediately or store in freezer up to two hours only.
