The second we start having spring-like weather, I start dreaming about picnicking. Packing up the fresh produce of the season and heading out somewhere green or sandy and letting the kids play all day while we munch on simple and fresh treats is the best.
While the weather is still in that bi-polar stage that comes before the warmth actually sticks around for good here, that isn’t stopping me from starting to bring the fun of a spring picnic into my kitchen when I can, and today’s recipe is a perfect example.
Vibrant Fruit Kabobs with Greek Yogurt Dip
These Vibrant Fruit Kabobs with Greek Yogurt Dip give me all kinds of summer feelings with their bright flavors and gorgeous colors. Using fun, out-of-the-box fruits like dragon fruit and blood oranges not only looks stunning, but also gets my kids a lot more excited about eating fruit since these are a big change from their standard apple slices. Plus, putting them on a stick not only makes them more fun, but also makes them perfectly portioned and portable for a picnic. Add some creamy, sweet greek yogurt dip and you’ve got the most wonderful treat for a spring afternoon.
- 1 pineapple
- 1 dragon fruit
- 2 kiwis
- 2 large blood oranges
- 1-8 oz container vanilla greek yogurt
- 1 tsp honey
- Prepare fruit for kabobs. Peel, core, and cube pineapple. Peel, slice, and halve kiwis. Peel and cube dragon fruit. Slice and quarter one blood orange.
- Layer fruit on skewers or party straws to make kabobs.
- To make the fruit dip, squeeze 1 tablespoon of juice from remaining blood orange into a medium bowl.
- Add yogurt and honey to juice and mix well. Serve immediately with fruit kabobs or refrigerate.
Home Chef Tip: This recipe is so fun because it is so adaptable. You can change up the fruits and use what is in season, and add different flavors to the base of the dip. I love the idea of adding different fruit juices like lemon for added tartness, or even adding a little chocolate syrup in place of the juice and honey for a more decadent treat!

Every time I cut into a blood orange I am amazed by its rich color, and don’t even get me started on that dragon fruit. Those things are party animals.
