Spring Champagne Sangria with Seasonal Ingredients
With warmer weather finally here to stay (we hope!) and Picnic Season right around the corner, here’s a delicious and simple Sangria recipe using fruits that are in season in the Spring. Using champagne instead of regular wine as the base makes this recipe fizzy and fun. A little sweet, a little tart, and with just enough sparkle – this Sangria recipe goes down easy and is sure to be a hit at your next picnic or outdoor party!
Spring means it’s rhubarb season, and because it’s not available for long, this recipe is the perfect use for the tart vegetable – making it the star of the show. Because rhubarb and strawberries go hand-in-hand, they join the party for a hint of sweetness and additional color in this tasty libation. Mixed together with a classic mimosa-inspired base, this colorful cocktail tastes just like Spring – you’re sure to love it.
As is the case with most Sangria recipes, this can – and should – be made a couple of hours in advance to allow the flavors to really blend together. Simply combine all the ingredients (except for the club soda) and chill until needed. Just before serving, pour in the soda, and top with additional frozen strawberries. Be sure to give everything a good stir at that point.
To serve, use whatever pretty glassware you have, and feel free to top each glass with an orange slice or a few frozen strawberries! Not only is this drink festive and fun, but besides the champagne, it has no additional liquor in it, so it’s a bit easier to drink than some other Sangria recipes out there.
Pro tip: Reach for a drier bottle of champagne (like a Brut) if you prefer your Sangria to be a little on the tart side. Like it sweet? Swap the Brut for an Extra Dry, and voila!
- 1 (1.5 L) Bottle Champagne - Brut or Extra Dry
- 1 (32 oz) Bottle Club Soda
- 1½ cups Orange Juice
- ¼ cup Sugar
- ½ cup Water
- 3-4 stalks of Rhubarb
- Frozen Strawberries, Oranges for serving
- Make rhubarb simple syrup by combining sugar and water in a small saucepan, add sliced rhubarb, and mix over medium heat until sugar is dissolved. Allow to cool to room temperature and strain rhubarb out of the syrup.
- Pour orange juice, simple syrup, and champagne into pitcher or serving vessel. Stir.
- Add sliced oranges and/or frozen strawberries and chill for 1-4 hours before serving.
- Just before serving, add club soda and stir. Enjoy with additional sliced fruit!
