If you’re anything like me, the biggest obstacle to healthy eating is entertaining and get togethers with family and friends. When I’m home during the week and shopping for myself, it’s easy to eat well. When the weekend comes, though, and we have social engagements, it’s much harder to stay on track.
That’s where this Tomato Mango Salsa comes in. It’s healthy, fresh, and the perfect make-ahead appetizer to take to all of your parties and casual get togethers. Because let’s face it, anything that is too time consuming with too many ingredients just isn’t going to happen. This is perfect to throw together the day before; in fact, it’s even better when it has a chance to sit in the fridge for a bit.
The ingredients are easy to find, though other ingredients can be subbed in for a fun twist on the recipe. If you can’t find fresh mango, you can sub in canned mango in juice.
This recipe would also be delicious with fresh pineapple instead of the mango, or with the addition of avocado, corn, or even black beans!
- 2 plum tomatoes, diced
- 1 mango, diced (you can also used canned mango)
- ½ cup diced yellow and red peppers
- ¼ red onion, diced
- 2 tablespoons cilantro
- 2 tablespoons fresh lime juice
- dash cayenne pepper
- salt and pepper to taste
- Combine all ingredients in a bowl. Let sit for ½ an hour (or longer) in the refrigerator for better flavor.
- Serve with tortilla chips.
